Here's my method (my mom has been doing this for weight loss/ keeping off weight for the past 7 years
) :

I'm trying to get down to 115 by the con. Just by living, a person with my height and my desired weight (115) burns 1,519 calories a day. I can have 10,640 calories total per week.
I use a spreadsheet to keep track of the calories in the food I eat, and I eat as if I weighed 115 pounds (Adding exercise in negates calories if you accidentally go over the calorie limit.)
Here's what my data is like for today: (I woke up at 11:30, so I wound up with a brunch instead of breakfast AND lunch)

Yogurt 170
mochi 60
drink 25
soup 130
mochi 60
Pocky 67
For a total of: 682 calories today.
I also jumped continuously on the trampoline outside for 15 minutes, which negates -305.25 calories.
So I have ACTUALLY only had 376.75 calories (but I'm gonna eat some popcorn now...which is about 300 calories for a bag)
I started yesterday, and I have already lost 1/2 a pound
I am also making sure to take a vitamin supplement (just in case :3)
